Bad to the bone!! Shouan is the villain of CMB which Mao must defeat!! Originally, Shouan was Pai's only "official" student. Pai spent so much of her time and energy, just so Shouan can become the best chef there is. Unfortunately, he not only did not thank her, he was using her all along. He made it clear to her about his little "plan" one day, when he thought she had taught him everything about cooking. They got into an argument, and during the fight he accidentally poured hot oil on himself, particularly his eye (That's why he had to wear an eyepatch to cover the burn). After leaving Kikkaro, he claims that he suffered a lot. It's obvious that he brought this fate upon himself right? Well apparently he doesn't think so. He blames everything on Pai, and hopes to take over Kikkaro after her death. Of course Mao is not going to let him do that, and won against him in a life-deciding cooking tournament (Episode 1-3). Shouan swears for revenge, and joins the Dark Cooking Society in order to do so. Because of Shouan's immense hatred towards Mao, he is able to endure the harsh training, and quickly moved up in ranks. Shouan's ultimate goal is to take control of Shanghai to show Mao that he has surpassed the skills of Pai However, his plan failed when he made "Three Harmony Tofu", which he thought was his own magnificent creation, but it was really Pai who created it. The gist of this is, that no matter how much we refuse, we always return to our origin in some way or another. In other words, "There is no place like home" ^^. Therefore this is the reason Shouan lost to Mao. But Shouan, being his stubborn and conceited self, still does not realize his faults until the very end, when Mao tells him that Pai was concerned about Shouan despite of everything he caused. Tragically, it is already too late. I very much agree with Shell's opinion about Shouan: Shouan is a very tragic character indeed. First of all, he was stripped off his career as a cook because he failed to make Pai's dish. And now that he finally succeeded (unconsciously), he once again lost everything.
